Gluten Free chocolate chip oatmeal cookies
Ingredients
2 Cups gluten free oats (or old fashioned rolled oats if not GF)
6 Tablespoons almond flour
4 Tablespoons flax meal
Optional-2 teaspoons (too taste) cinnamon
¼ teaspoon salt (I used Himalayan pink)
4 tablespoons melted coconut oil
½ cup nut butter (I used almond butter. Sun butter works too if nut free.)
6 tablespoons maple syrup
6 tablespoons coconut sugar
2 teaspoons vanilla extract
½ cup chocolate chips (I used Lily’s milk chocolate)
Optional add-ins- dried cranberries, almonds, walnuts, raisons, unsweetened coconut flakes
Baking Instructions
Preheat oven to 350degrees
Use parchment paper to line cookie sheet (Easy cleanup)
Combine all dry ingredients.
Melt coconut oil and combine with all wet ingredients.
Combine dry and wet ingredients in large bowl, add in chocolate chips and any other desired add-ins.
Scoop with ice cream or cookie scoop into balls onto lined cookie sheet.
Bake for 10-12 minutes.
Makes about 20-24 cookies depending on how big you scoop!
