Gluten Free Banana Bread

Ingredients

3 Super Ripe mashed bananas

1 Cup nut butter (I used almond. Feel free to use whatever suits your fancy)

¼ cup melted coconut oil

1/3 cup milk (I used unsweetened almond.)

3 tablespoons maple syrup

4 tablespoons coconut sugar

1 cup almond flour

½ cup gluten free oats (or GF oat flour. I blended my oats into a flour.)

1 teaspoon baking soda

¼ teaspoon baking powder

¼ teaspoon salt (I used pink Himalayan)

Optional add-ins: chocolate chips, raisins, nuts, blueberries.

*I love to double this recipe. These are a huge hit and will go fast!

Baking instructions

Preheat oven to 350

Combine dry ingredients.

Mash bananas. Melt coconut oil. Combine with wet ingredients. Add optional add-ins.

Scoop into silicone muffin pan or lined muffin tin. ¾ full.

Bake for 25-30 minutes.

Slap some vegan butter on these babies and enjoy hot! Great the next day too, but really fresh out of the oven with butter is where it is at!
